I know I shouldn’t mess with a beautiful, fresh cut piece of Halibut steak, but I just made some guajillo chile sauce and needed to try it on something!  Along with the heirloom tomato and cayenne peppers harvested from my garden, I added avocado and placed all on a bed of lightly dressed greens.  I had asked myself, “why did I make so much chile sauce?”  I know now; just for the Halibut!
